The Revoltillo de Baena (also known as the revoltillo baenense) is a dish of the kitchen Cordobesa (Spain) very popular in the municipality of Baena (Province of Cordoba) .The main ingredient consists of a certain variety of vegetables in the region as they can be: the asparagus, the beans, the ajetes, and the egg as well as the ham. The final format of the dish is composed of an egg scramble to which the different vegetables are added. The ham crowns the presentation in the form of mincemeat decorates the dish. Usually freshly prepared.
