Koukouvagia

Koukouvagia.

The koukouvagia (in Greek κουκουβάγια, 'owl') or dakos (ντάκος) is a popular cretan or meze appetizer made with crushed tomato, mizithra cheese (a traditional Cretan goat cheese), olive oil on a biscotti (παξιμάδι). Originally a poor recipe, it is currently on the menus of many restaurants. Unlike fresh bread, the paximadi was available anywhere, at any time (eg for shepherds and fishermen), and thanks to its simple ingredients, the koukouvagia allowed a complete meal. The exact recipe varies from place to place. The koukouvagia is taken as an aperitif or for breakfast.
