Scagliozzi.

The scagliozzi (napolitano scagliuozzi) are a product of friggitoria typical of Neapolitan cuisine, present also in Foggia, Messina, Tuscany and Bari. Description

They are made with polenta that is normally allowed to dry a few days after preparation to lose some water and fry it without melting it in hot oil, cut into small triangles and salad. It is sold in friggitorie typical of Naples along with other typical products such as pastacresciute, sciurilli (zucchini flowers), fried eggplant slices (similar to Japanese tempura), small round arancini (rice balls) and crocchè (croquetas) of potato.

It should be noted that, unlike other fritters (like the arancini) of Naples, they are gradually disappearing and are more difficult to find, sticking to a few typical fryers.

On the other hand, in Bari it is traditional to find this recipe in old town stalls, especially on holidays.
