Juan Bautista Blancard
Juan Bautista Blancard was a French cook who settled in Madrid at the end of the 18th century and who had his area of influence in the Court of Fernando VI. Her culinary performance was linked to her French companion Mateo Hervé. Both in the year 1796 they had like charges to be aid of the Real Kitchen of Mouth of the Reina with honors of Heads of the Real Viandas.Hiring of these two cooks during the time of Felipe V supposed a rupture of style, the previous stage was marked by the Austrias, French cuisine was imposed, derived from the French origin of the dynasty and therefore the presence of French chefs in the Court and the prestige of French gastronomy, the great model for all Europe of the time.
Blancard commits himself on March 6, 1754 to serve the table of the Gentilhombre de Cámara for 120 reales of fleece per day.
Much of the life of this cook is unknown and he eventually developed his profession in Spain.
