Mirza Ghasemi

Mirza Ghasemi (also: Mirzā-Ghāsemi, Persian میرزاقاسمی), is a Northern Iranian appetizer, based on eggplant. The aubergines are baked or grilled in Tandur, especially in the region around the Caspian Sea. Originally from Gilan, it is mainly prepared in Māzandarān and Golestan.

The eggplant out of the bowls is mixed with garlic, tomatoes, turmeric, fat (like oil), salt, pepper and eggs. Bread (Nān) and / or rice are served here.

A variation that is made with courgettes instead of aubergine is called Kadoo (Mirza) Ghasemi. Single-level Edit source text
