Pommeau is an aperitif or a digestif from Normandy. Pommeau is made from freshly pressed apple juice, which is prevented by adding young calvados to the fermentation. This gives the full apple aroma, fruit flavor and pleasant acidity.
In 1991, 30 apple varieties may be used, the selection of which determines the flavor. A minimum of 14 months of storage is required.
