terrine
A terrine is a pot of glazed clay (terracotta, in French terre cuite) used in the kitchen with vertical sides and a tightly fitting lid, rectangular or oval. Modern versions are also manufactured in enameled cast iron. Terrine of salmon and basil.
By extension, the term also refers to food prepared and served in a terrine, mainly game or deer, head cheese and pates. If pressed and cooled, cut into slices to serve it, a terrine becomes pâté, which Julia Child defined as "a cold meat pie of luxury". Notes
