Opera cake
The opera cake (French Opéra) is a French flat cake. It consists of almond biscuit layers (Joconde in French), soaked with coffee syrup, ganache and coffee-butter cream. It is then covered with chocolate. The French patisserie Dalloyau made the cake. There is a lot of information about the inventor. According to Dalloyau, pastry pastry chef Cyriaque Gavillon invented the cake in 1955, others said that Louis Clichy had presented the same cake in 1903 at the Exposition Culinaire in Paris.
