Queso Västerbotten
The Västerbotten is a cheese from the Swedish region of Västerbotten. It is a hard cheese of cow's milk with holes and a firm and granular texture. As in Cheddar cheese, the curd is heated, cut and removed before the cheese is aged into molds. It has a strong flavor described as similar to parmesan, salty, but with more bitter notes. It is light yellow in color and has a fat content of 31%. Some Swedes consider him the king of cheese and their demand often exceeds their limited supply. It should age a minimum of 12 months, being the most frequent 14.
The town of Burträsk (now part of the municipality of Skellefteå) claims the invention of Västerbotten cheese in the 1870s, supposedly by a dairywoman, Eleonora Lindström. According to legend, she was left alone stirring the curds of a traditional cheese but was interrupted, either by other tasks or by an appointment with her lover. This caused the periods of heating and removal of the curd to alternate. Bibliography
