Pom
The pom is a typical dish of the gastronomy of Suriname. It is prepared by baking a preparation based on chicken, citrus and pomtajer (Xanthosoma sagittifolium, product similar to taro).
The dish is very popular in Suriname, having also become popular in the Netherlands. The pom is very popular as a dish that is offered at parties, birthdays and celebrations. In Suriname it is believed that its origin goes back to the Creole and / or Jewish community. Preparation
The three main ingredients are: chicken, citrus juices and pomtajer. Only the latter is native to Suriname, and although all parts of the plant are edible, only the underground section of the main stem is used to prepare pom. The main stem or corm is often called pomtajer or pongtaya.
To prepare the pom in a fountain are placed pieces of chicken fried with garlic, pepper and spices between two layers of pomadejer grated raw which is mixed with citrus juice and a sauce prepared with oil or margarine, onions, tomatoes, celery, salt, pepper and nutmeg. The preparation is baked for an hour or until the pom takes on a golden color. Once roasted, the pom is cut into pieces and served hot with rice and vegetables or cooled and served between slices of bread in the form of a sandwich. Bibliography
