Cayambe (city)

Cayambe is a city in the province of Pichincha in Ecuador and is located northeast of the capital Quito. Cayambe is the capital of the canton of the same name and had 30,473 inhabitants in 2001. The city lies at the foot of the volcano Cayambe, the highest mountain in Ecuador, with 5790 m of the third highest mountain.

Since the 1990s, the canton and city have experienced significant population growth, mainly due to the fact that the Cayambe surrounding haciendas have become one of the world's major cultivation areas for roses.

From Cayambe and its surroundings is also a regional musician of the same name, very popular in this region. In addition, the city is known among locals and tourists for the so-called Bizcoches, a pastry specialty. The same word generally refers to pastry goods in Colombia, but in Ecuador it is only this type of butter pastry. Another culinary specialty is the "queso de hoja". The name (cheese of leaves) is due to the fact that the cheese is rolled up as a stick and sold - and used for this purpose. However, plastic films are now used.
