La Clocha (in Catalan, Clotxa) is a traditional dish typical of the regions of Ribera de Ebro and Tierra Alta, belonging to the province of Tarragona, Spain, which the peasants prepared to eat in the field after playing hard agricultural tasks. In the towns of Mora la Nueva and Flix, the "Gastronomic Fair of the Clocha" is celebrated, where you can taste this genuine dish. The "Ribera de Ebro Regional Council" also sponsors the "Festival de la clocha" which runs from February 11 to May 1, which consists of the promotion of clocha in restaurants throughout the region. Elaboration

It is a question of emptying a bread of peas and filling it with herring, sardines, garlic, onion and tomatoes escalivados (roasted). Then put the crumb back into the bread, add oil and salt and you are ready to eat. There is a variant of this dish that integrates the sausage in the elaboration to the detriment of the herrings.
