The bacalaítos are served throughout Puerto Rico in different versions. According to the recipe, salt cod is soaked or boiled to remove most of the salt. Then it drains and crumbles, adding to a batter of flour with spices. Then fry. It is frequently seasoned with sofrito, parsley, cumin, orégano witch and annatto.
