Anmitsu


Anmitsu.

Anmitsu is a Japanese dessert that has been popular for many decades. It is made with small agar-agar cubes, a translucent white gelatin made of red or green algae. The agar-agar is dissolved with water (or apple-like juice) to make gelatin. It is then served in a bowl with anko (to which the name refers), cooked peas, often gyūhi and various fruits, such as peach, mikan, pineapple and cherry. The anmitsu usually presents with a small bowl of sweet black syrup or mitsu (to which the name alludes), that is poured on the gelatine before eating it. The anmitsu is usually eaten with a spoon and fork.

There are a few variants of this dessert. The mitsumame is anmitsu with anko, alluding the mame to the peas that are served with the syrup and the anko. It can also be served with ice cream on top. It is also common to use shiratama dango to cover it.
